Key factor: Review the venue’s menu in advance—its signature dishes and cuisine style.

The 3 Golden Rules

  1. Match weight: light wine ↔ light dish; bold wine ↔ hearty dish.
  2. Bridge a flavor: echo one element (herb, sauce, smoke, fruit) in the wine.
  3. Balance: acid cuts fat; sweetness soothes spice; salt loves bubbles.

30-Second Pairing Interview (use verbatim)

  • “What’s the star of the dish (protein or veggie)?”
  • “How is it cooked (grilled, fried, raw, sauced)?”
  • “What’s the loudest flavor (spicy, citrusy, smoky, creamy)?”

Fast Pairing Matrix

  • Crispy/Fried & Salty → Sauvignon Blanc or sparkling (acid + bubbles).
